I remember with Dove when we had to teach her to swallow and to eat. Great idea with the taste of different flavors. Have they had you do a pudding play in OT. The fingers will often go into mouth as a reflex. It might get him to taste a few things that way. Yes it is a mess so a high chair really helps keeping it on the tray.
